Tomorrow, Aug 8, is sneak some zucchini onto your neighbour’s porch day!
For those prolific growers of zucchini, you will know that it seems to multiply overnight in the garden! For those who do not grow it, grateful are the recipients of those who have way too much to use.
The best ever summertime cake is a chocolate zucchini cake made from scratch and while zucchini can get mushy if it sits too long, you can grate it and pop it in the freezer to keep for snowy days when its time for a savoury ragout!
Bringing the zucchini out of the freezer and adding it to baking, stews or any other dish is a great reminder that summer and all the goodness from the garden isn’t that far away!
So while you might want to roll your eyes when a random zucchini shows up on the doorstep, know that someone loves you enough to share their bounty and they have WAY too much of the stuff to keep it all to themselves!
